According to legend, the ancestor of ice cream dates back to the days of the Roman Empire. The servants of the 5ᵉ Emperor of Rome offered him snow from the mountains, flavored with honey and fruit juice, as a token of their thanks. The very first mixture of ice cream and honey was the work of the Italian cooks of Catherine de Médicis, regent of the French kingdom during the reign of Charles IX.
On our side of the Atlantic, the first ice cream was served in the United States in 1700. It was also in the United States that the first dairy bars appeared in 1800 and the first ice cream vendors in 1820.
It wasn't until the early 20ᵉ century that the ice cream industry took hold in Quebec. By this time, there were already vendors in Montreal distributing handmade ice cream. However, it wasn't until 1940 that the industry really took off. Post-war prosperity enabled working-class households to afford ice cream frequently. No longer considered a luxury, ice cream became a must-have in Quebec.
